Our mission is to create traditional Belgian style beers using the finest malts, hops, and the purest mountain water. We take pride in our "Small Town| Big Beer" reputation.
We create our award-winning Belgian style beers a 10bbl (310 gallon) steam-fired brewing system using traditional European brewing techniques, such as step-mashing.
We also use ingredients unique to Belgian brewing such as Belgian "candi" sugar. This is an unrefined sugar beet-derived sugar which has been subjected to Maillard reaction and caramelization. This contributes to the flavor, color, and overall complexity of the beer.
In addition to traditional techniques and ingredients, we also utilize modern innovations and technology to produce quality beer consistently.

My husband and I opened PersNIKKIty's in 2011, because we wanted to use both my experience as a savory chef and my love for the "sweeter" things in life. I began working in restaurants at 14 years old and quickly learned that this is where my passion was, cooking and hospitality.
I graduated from Blue Ridge High School in 2003 and headed straight for New York to follow my dreams. In 2005, I graduated from the Culinary Institute of America in Hyde Park, New York, and was ready to begin my career. After graduation, I moved to Brooklyn, NY and joined the amazing crew at Charlie Palmer's Metrazur in New York's Grand Central Station.

What a great place - beautiful landscape and a cute homely feel - on a cold day had lovely tomato bisque and the grilled cheese that is just the best! Good prompt friendly service despite being super busy and we enjoyed it all.

"Cute doughnut shop set up like a make your own sundae bar. They have different glazes, sprinkle toppings, gummy worms , mini mallows. I just wanted to duck in and out . Got 4 doughnuts and the chocolate devils food was crazy delicious . They hand stamp their logo on your box. I loved this little small cafe and doughnut shop. It's worth it to stop by if you're driving through town. The guy helping out was so nice too. They have other treats they bake, like GINORMOUS sourdough loaves. It's a cool little stop. "
